Ingredients

  • 1 1/2 lb boneless skinless chicken thighs, cut into 1" cubes
  • 1 medium yellow onion, cut into 1" pieces
  • 2 bell peppers, any color, cut into 1" pieces
  • 1 tbsp canola oil
  • 1/4 cup pineapple juice
  • 1 1/2 cups pineapple chunks, fresh or canned
  • salt and pepper, to taste

Sauce

  • 2 tsp cornstarch, or flour, mixed with 1 tbsp water
  • 1 tbsp brown sugar
  • 1 tsp white vinegar
  • 1 tsp soy sauce, low sodium
  • 1/4 cup hoisin sauce

Serving

  • Cooked white rice (optional)

Instructions

  1. Take a medium bowl and whisk all the sauce ingredients together - hoisin sauce, vinegar, soy sauce, sugar, and cornstarch. Set aside.
  2. Season chicken with salt and pepper and set aside.
  3. Heat up a large skillet on medium-high heat. Add oil, once hot add the chicken to the skillet.
  4. Sauté the chicken until lightly browned for about 2 minutes per side.
  5. Now add bell peppers, onion, and pineapple chunks and sauté until crisp and tender.
  6. Add the sauce mixture, bring to a boil and stir continuously until the chicken pieces are well coated.
  7. Once done, remove from heat and serve the chicken and rice inside a hollowed-out pineapple or just over plain rice.
