Important Notes
- If you don’t have chicken thighs in hand then you can easily replace that with chicken breast.
- If you prefer a thicker stew, then after its done cooking, stir in xanthan gum and cook for another 4-5 minutes or until it thickens.
- If you don’t want to garnish with basil at the end then add the basil into the pan when adding spices.

Recipe FAQs
Can I make this recipe ahead of time? Yes! You can easily make this Keto Chicken Cacciatore ahead of time. In fact, like many stews and braised dishes, it actually tastes better the next day as the flavors have more time to meld together. Just refrigerate it and reheat when you’re ready to eat.
Can I use boneless chicken? You can use boneless chicken, but the sauce will be a bit different. Bone-in chicken adds extra flavor as it releases collagen and fat into the sauce, making it richer.
How do I make the sauce thicker? If you want a thicker sauce, you can simmer it uncovered for longer to reduce the liquid. Alternatively, you can stir in a bit of xanthan gum or a low-carb thickener to achieve your desired consistency.
Can I use canned tomatoes? Yes, you can use canned tomatoes. Just be sure to choose no-sugar-added varieties to keep it low-carb. Fresh tomatoes will provide a more vibrant flavor, but canned is a great time-saving option.
