  1. Cook the pasta – I boil about 3 cups of rotini until it’s al dente. Drain it well so the sauce clings properly.
  2. Brown the beef – In a big skillet, I cook the ground beef with diced onion, minced garlic, and Italian seasoning until it’s nicely browned. Don’t skip draining off that excess fat—it keeps the casserole from getting greasy.
  3. Mix the sauce – In a large bowl, I whisk together the pizza sauce and a bit of water to loosen it. Then I add the cooked pasta, browned beef, most of the mozzarella, and about 20 pepperoni slices (I usually slice them in half). It all gets stirred together until the pasta is well-coated.
  4. Assemble – I spray a 9×9 baking dish (because I hate stuck-on cheese) and pour in the pasta mixture. Then I sprinkle the remaining mozzarella on top and arrange the last of the pepperoni slices evenly over it.
  5. Bake – I cover it with foil (sprayed with a bit of oil so the cheese doesn’t stick) and bake at 350°F for 20 minutes. Then I uncover it and bake for another 5–10 minutes until the cheese is melted and slightly golden.

Ingredients

  • 1 pound ground beef (or use Italian sausage)
  • ½ onion, diced
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • 14-ounce jar pizza sauce
  • ¾ cup water
  • 3 cups rotini pasta (measured dry, then cooked)
  • 2 cups shredded mozzarella cheese, divided
  • 36 slices pepperoni, divided
  • Nonstick cooking spray

Instructions

  1. Bring a large pot of salted water to a boil and cook the rotini according to package directions. Drain and set aside.
  2. In a skillet over medium heat, brown the ground beef with diced onion, garlic, and Italian seasoning. Once the meat is fully cooked and crumbled, drain any excess grease and set the mixture aside.
  3. Preheat your oven to 350°F.
  4. In a large bowl, whisk together the pizza sauce and water. Stir in the cooked pasta, 1½ cups of mozzarella cheese, the cooked beef mixture, and 20 slices of pepperoni (cut in half for better distribution). Mix everything until well combined.
  5. Lightly grease a 9x9-inch or 11x7-inch baking dish with nonstick spray. Pour the pasta mixture into the dish and spread it out evenly.
  6. Top with the remaining ½ cup of mozzarella and arrange the rest of the pepperoni slices over the top.
  7. Cover the dish with aluminum foil. For easier cleanup and to prevent sticking, spray the underside of the foil with nonstick spray.
  8. Bake covered for 20 minutes, then remove the foil and continue baking for another 5–10 minutes, or until the cheese is fully melted and bubbly.
