Ingredients

  • 3 cups shredded rotisserie chicken
  • 15 cooked lasagna noodles
  • 3 cups shredded mozzarella cheese
  • 2 tablespoons butter, unsalted
  • 10 ounces fresh baby spinach
  • 1 cup onion, chopped
  • 2 garlic cloves, minced
  • 4 cups heavy cream
  • 15 ounces ricotta cheese
  • 1 1/2 cup grated parmesan cheese
  • 1 1/2 teaspoons salt
  • 1/4 teaspoons black pepper

Instructions

  1. Heat a large skillet over medium high heat, add 2 tbsp of butter, once melted, add minced garlic and chopped onion.
  2. Saute for few minutes or until the onion becomes translucent.
  3. Add spinach and stir until slightly wilted.
  4. Add heavy cream, ricotta cheese, grated parmesan, shredded rotisserie chicken, black pepper, and salt.
  5. Bring it to a simmer and immediately remove from the heat.
  6. Lightly grease a 9 x 13 inch deep baking dish with cooking spray or brush it with little oil. Add a large spoon of the chicken mixture to the bottom of the pan, then add cooked lasagna noodles. (mine was about 5 but it depends on the size the dish)
  7. Again add the chicken Alfredo mixture on top of the noodles and sprinkle shredded mozzarella cheese (about 1/3)
  8. Now repeat the same, layer the lasagna noodles, add chicken Alfredo, then sprinkle with shredded mozzarella or until all of your lasagna noodles are assembled.
  9. Cover the lasagna with foil and bake for about 35-35 minutes at 350˚F.
  10. Uncover and broil for 2-3 minutes uncovered to brown the cheese.
