- 1 cup chicken broth, low sodium
- 4 oz cream cheese
- 1 cup sour cream
- 1 tablespoon olive oil
- 2 garlic cloves, chopped
- 1/2 cup chopped onion
- 16 oz cauliflower, frozen
- 2 cups shredded cheddar cheese, divided
- 1 teaspoon chili powder
- 1/2 teaspoon red cayenne pepper
- 1 teaspoon ground cumin
- salt and pepper to taste
- 3/4 cup enchilada sauce (or homemade sauce)
